Three Ingredient Peanut Butter Date Bark

We spotted this Mob recipe and couldn't not make it. Just dates, dark chocolate, and our Almost Smooth Peanut Butter. A ridiculously tasty super food snack, that's way too easy to keep going back for "just one more piece".

Equipment Needed

Baking tray, cling film, rolling pin, sauce pan, mixing bowl, palette knife or spatula

Ingredients

  • 12 pitted dates
  • 30g Almost Smooth Peanut Butter
  • 100g Dark Chocolate

Method

1. Line a small baking tray with parchment. Split the dates and press them sticky side down, overlapping a little so they hold together. Cover with cling film and give them a good roll to flatten and help them stick, then peel off the cling film.

2. Drizzle peanut butter over the top and spread evenly. Pop the tray in the freezer for about 30 minutes to firm up.

3. Meanwhile melt the chocolate in a bowl over a pan of hot water, or alternatively in the microwave in 30 second bursts, stirring between each go. Once completely melted, spread over the chilled peanut butter dates.

4. Pop in the freezer for 30 minutes before portioning.

Recipe Notes

Chopped peanuts can be mixed into the peanut butter layer for an extra crunch, and a sprinkle of sea salt on top of the chocolate takes it to the next level. Store your date bark in the fridge or freezer until you’re ready to dig in.
