Equipment Needed

1lb loaf tin, measuring scales, measuring spoons, mixing bowl, spatula, heatproof bowl, saucepan

Ingredients

For the cookie dough:

  • 125g Almost Smooth peanut butter
  • 1 tbsp coconut oil
  • 1 tsp vanilla essence
  • 3 tbsp maple syrup
  • 25g dark chocolate chips
  • 50g ground almonds

For the cereal topping:

  • 150g dark chocolate chips
  • 45g Surreal Peanut Butter Cereal
  • Flaked sea salt

Method

1.) In a bowl, mix together the Almost Smooth peanut butter, coconut oil, vanilla essence, maple syrup, dark chocolate chips, and ground almonds until a soft cookie dough forms.

2.) Grease a 1lb loaf tin with coconut oil, then press the cookie dough firmly into the base of the tin.

3.) Meanwhile, melt the chocolate chips in a heatproof bowl using a bain-marie or short 30-second bursts in the microwave, stirring until smooth and glossy. Add the cereal and stir until completely coated.

4.) Pour the cereal mixture over the cookie dough base and refrigerate for at least 2 hours, or until the chocolate is fully set.

5.) Once set, remove from the tin, slice into bars, and enjoy!
