1.) Preheat the oven to 200°C fan. Once heated, place the Seeded Sourdough in the middle of the oven and bake for 22-23 minutes. Once cooked, remove from the oven and leave to cool for 1-2 hours.
2.) Next, make the cucumber pickles. Thinly slice the cucumber, then mix the pickling liquor together in a bowl. Add the cucumber slices and set aside to pickle.
3.) Make the sauce for the prawns. Mix together the Everything Bagel Peanut Butter, soy sauce, lime juice, honey, sesame oil, garlic, ginger and chilli. Add warm water a little at a time until you have a smooth, glossy sauce that's thick enough to coat the prawns. Set aside.
4.) Next up, prepare the Everything Bagel Peanut Butter dipping sauce. Mix all the ingredients together in a bowl, slowly adding warm water until you reach a dipping consistency. Set aside.
5.) Finally, make the peanut butter toast topping. In a bowl, mix together the peanut butter, oil and butter until you have a smooth, spreadable consistency.
6.) Slice the Seeded Sourdough into thick slices and spread a couple of slices generously with the peanut butter toast topping. Place a frying pan over a medium-low heat. Add the sourdough and fry gently for around 2-3 minutes, pressing it down occasionally, until deeply golden and crisp around the edges. Spread the top side with more peanut butter toast topping, then flip the sourdough and toast the other side. Once golden and crisp, place on a plate.
7.) Turn the heat up to medium-high and add the cooked prawns to the pan. Pour over the peanut butter sauce and warm through, being careful not to overcook the prawns. Toss the prawns through the sauce for 30-60 seconds, adding another splash of water if necessary. You want the prawns glossy and coated, rather than swimming in sauce. Remove from the heat as soon as everything is warmed through.
8.) Top the sourdough toast with the drained cucumber pickles, followed by the peanutty prawns. Garnish with sliced spring onion and diced red chilli, if desired, along with a few sprigs of coriander and a sprinkling of sesame seeds. Serve with the Everything Bagel Peanut Butter dipping sauce on the side and dig in!
