Super Seeded 'Posh' Prawn Toast

Prawn toast is always a takeaway favourite, but we’ve created a slightly fancy version to elevate the everyday. Bread Queen’s Seeded Sourdough provides the perfect bed for delicate prawns, coated in a moreish Everything Bagel Peanut Butter sauce and paired with punchy pickled cucumber. It’s a dreamy combination of salty, nutty, slightly sweet, spicy and sharp flavours, all piled onto a beautifully crisp, golden slice of sourdough. And because we believe there’s no such thing as too much sauce, we’ve added a dipping sauce for an extra layer of flavour - perfect for dunking those crispy crusts to your delight.

Ingredients

For the crispy sourdough:

Prawn topping:

  • 200g prawns, cooked
  • 2 tbsps Everything Bagel Peanut Butter
  • 1 tsp soy sauce
  • 1 tsp lime juice
  • ½ tsp runny honey
  • ½ tsp sesame oil
  • 1 small garlic clove
  • ½ tsp fresh ginger
  • 1-2 tbsps warm water
  • Sliced spring onions, finely diced red chilli, a few sprigs of coriander and sesame to garnish

Quick Cucumber Pickles:

  • ½ cucumber
  • 3 tbsps rice vinegar
  • 1 tbsp sugar
  • ½ salt
  • 1 tsp soy sauce
  • ½ sesame oil
  • Pinch chilli flakes

Dipping Sauce (optional):

  • 2 tbsps Everything Bagel Peanut Butter
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp runny honey
  • 1 tsp chilli sauce
  • 1-2 tbsps warm water, until dipping consistency

Method

1.) Preheat the oven to 200°C fan. Once heated, place the Seeded Sourdough in the middle of the oven and bake for 22-23 minutes. Once cooked, remove from the oven and leave to cool for 1-2 hours.

2.) Next, make the cucumber pickles. Thinly slice the cucumber, then mix the pickling liquor together in a bowl. Add the cucumber slices and set aside to pickle.

3.) Make the sauce for the prawns. Mix together the Everything Bagel Peanut Butter, soy sauce, lime juice, honey, sesame oil, garlic, ginger and chilli. Add warm water a little at a time until you have a smooth, glossy sauce that's thick enough to coat the prawns. Set aside.

4.) Next up, prepare the Everything Bagel Peanut Butter dipping sauce. Mix all the ingredients together in a bowl, slowly adding warm water until you reach a dipping consistency. Set aside.

5.) Finally, make the peanut butter toast topping. In a bowl, mix together the peanut butter, oil and butter until you have a smooth, spreadable consistency.

6.) Slice the Seeded Sourdough into thick slices and spread a couple of slices generously with the peanut butter toast topping. Place a frying pan over a medium-low heat. Add the sourdough and fry gently for around 2-3 minutes, pressing it down occasionally, until deeply golden and crisp around the edges. Spread the top side with more peanut butter toast topping, then flip the sourdough and toast the other side. Once golden and crisp, place on a plate.

7.) Turn the heat up to medium-high and add the cooked prawns to the pan. Pour over the peanut butter sauce and warm through, being careful not to overcook the prawns. Toss the prawns through the sauce for 30-60 seconds, adding another splash of water if necessary. You want the prawns glossy and coated, rather than swimming in sauce. Remove from the heat as soon as everything is warmed through.

8.) Top the sourdough toast with the drained cucumber pickles, followed by the peanutty prawns. Garnish with sliced spring onion and diced red chilli, if desired, along with a few sprigs of coriander and a sprinkling of sesame seeds. Serve with the Everything Bagel Peanut Butter dipping sauce on the side and dig in! 

Recipe Notes

If using raw prawns, make sure to devein the prawn, then cook for around 1-2 minutes on each side, until pink and just cooked through.

If you want to get fancy with the garnish, add the sliced spring onions to a bowl of ice cold water and leave them while you prepare the rest of the dish. This will make the spring onions curl up beautifully, adding a little extra pizzazz to your presentation.
