Spicy Chicken Bánh Mí Baguette

As baguettes go, this take on a Bánh Mì has it all!!! The Bread Queen’s Long Fermented Baguette holds all those delicious fillings perfectly, with a beautifully crunchy crust and a soft, flavoursome inside. And because it’s part-baked, you get the added bonus of finishing it at home, so it arrives at the table slightly warm and wonderfully fresh. The Hot Jalapeño Peanut Butter sauce brings the heat, while the savoury chicken and sharp, crunchy pickled veg come together to create one seriously tasty flavour bomb. While it takes a little time to prep all the elements, the effort is more than worth it for the reward your tastebuds are in for.

 

Equipment Needed

  • 2 chopping boards
  • Sharp knife
  • Bread knife
  • 1 shallow bowl or dish
  • 1 bowl
  • 1 frying pan or griddle pan
  • Measuring jug
  • Spoon
  • Measuring spoons

Ingredients

For the chicken marinade:

  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tsp brown sugar
  • 1 garlic clove
  • 1 tsp ginger
  • 1 tsp lime juice
  • 1 tsp sesame oil
  • ½ tsp chilli flakes

For the quick pickles:

  • ½ carrot
  • ½ cucumber
  • 3 tbsps rice vinegar
  • 1 tbsp sugar
  • ½ salt

For the Hot Jalapeño Peanut Butter sauce:

  • 4 tbsp Hot Jalapeño Peanut Butter
  • 1 ½ tbsp mayonnaise
  • 1 tsp lime juice
  • 1 tsp soy sauce
  • 1 tsp runny honey

Method

1.) Preheat the oven to 200°C. While the oven is heating, make the marinade for the chicken by adding all the marinade ingredients to a shallow bowl or dish. Butterfly the chicken breasts by slicing each one horizontally in half to create thinner pieces, or cover them with cling film and gently bash with a rolling pin until they are an even thickness. Add the chicken to the marinade and leave for 30 minutes.

2.) Next up, make the quick pickles. Peel the carrot, then cut the carrot and cucumber into thin strips. Mix the vinegar, sugar and salt together in a bowl, then add the matchstick vegetables. Leave for 20-30 minutes to pickle.

3.) Once the oven has heated up, add the Long Fermented Baguette and bake for 15–20 minutes, or until golden and crisp and leave to cool for 30 minutes.

4.) Prepare the other garnishes for the sandwich by thinly slicing the spring onion and red chilli. Set aside.

5.) Once the chicken has had time to marinate, add a little oil to a frying pan or griddle pan and heat over a medium-high heat. Add the chicken pieces and cook for 3-4 minutes on each side, until nicely charred and cooked through. Once cooked, remove from the heat and leave the chicken to rest for 5 minutes.

6.) Once the bread is cooked, leave it to cool slightly while you make the peanut butter sauce. Add the Hot Jalapeño Peanut Butter, mayonnaise, lime juice, soy sauce and honey to a jug and mix until you have a thick but spreadable sauce. If the sauce is too thick, add 1-2 tsp of warm water to loosen it slightly.

7.) Slice the baguette in half, then slice each half lengthways. Spread each bottom half with a generous layer of the Hot Jalapeño Peanut Butter sauce, then layer with a couple of Little Gem lettuce leaves and slices of chicken. Drain the pickles and gently pat them with kitchen towel to remove some of the excess pickling juice - this will help prevent the sandwich from becoming too soggy. Top the chicken with the pickles, then add the spring onion, chilli slices and sprigs of coriander, if using. Spread another layer of the Hot Jalapeño Peanut Butter sauce over the inside of the top half of the baguette, then sandwich together and enjoy!

Recipe Notes

If you have the time, marinate the chicken overnight to pack even more of a punch! And if you have an air fryer, why not make the chicken extra crispy? After marinating, coat the chicken breast in a little cornflour, then air fry at 190°C for 8-10 minutes, flipping halfway through, until crispy on the outside and cooked through.
