Smoky Steak Frites Baguette

The ultimate steak sandwich, with a Butter Bike twist. And we have to talk about that baguette. Bread Queen’s long-fermented bread brings incredible flavour and texture to every bite - golden and crusty on the outside, satisfyingly chewy in the middle and sturdy enough to hold every last bit of that smoky peanut butter sauce. It’s the kind of bread that turns a great sandwich into a seriously special one.

Ingredients

  • 1 Bread Queen Long Fermented Baguette
  • 1 steak (sirloin, rump or ribeye)
  • 1 small portion of thin-cut chips or fries
  • Few slices of pickled red onions
  • Handful of rocket
  • 4 tbsps Smoked Chilli peanut butter
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard

Method

1.) Preheat the oven to 200°C. Once the oven has heated up, add the Long Fermented Baguette and bake for 15-20 minutes, or until golden and crisp and leave to cool for 30 minutes.

2.) Cook the thin-cut chips or fries according to the packet instructions. Once cooked, season well with salt.

3.) While the chips are cooking, make the peanut butter sauce. In a bowl, mix together the Smoked Chilli Peanut Butter, mayonnaise and Dijon mustard until smooth, then set aside. If the sauce is a little thick, loosen it with a small splash of water.

4.) Next, prepare the steak. Set a frying pan over a high heat and allow it to get very hot. Season the steak well with salt and pepper on both sides, then add it to the pan and cook to your preferred doneness. For medium, cook for approximately 2-3 minutes on each side, depending on the thickness of the steak. Remove from the pan and leave to rest for 5 minutes.

5.) While the steak is resting, cut the baguette in half, then slice each half lengthways. Spoon a generous amount of the peanut butter sauce over the cut sides of the baguette, then top with the rocket and seasoned fries.

6.) Thinly slice the rested steak against the grain and arrange over the fries. Finish with a few slices of pickled red onion, sandwich everything together and serve immediately, with extra peanut butter sauce on the side, if desired. Enjoy!
