Smoky Carrot Salad with Honey Halloumi Croutons

If all salads were like this, no one would ever say salads are boring. This salad has serious main character energy.

A crisp base of lettuce, crunchy grated carrot, fresh mint and a hit of red chilli bring freshness, crunch and just the right amount of heat. And then there’s the dressing: rich, creamy, smoky Smoked Chilli PB that pulls the whole thing together in the most delicious way.

This salad hits every sense in the best possible way, finished with golden, honeyed halloumi croutons for that salty-sweet, squeaky, crispy bite.

COME ONNN! This isn’t a side salad, this is the main event.

Equipment Needed

Frying pan, chopping board, sharp knife, grater, mixing bowl, jug, whisk

Ingredients

For the salad:

  • 100g halloumi
  • 1 tbsp runny honey
  • ½ iceberg lettuce
  • 1 large carrot
  • 1 red chilli
  • 3 spring onions
  • 30g salted roasted peanuts
  • 15g fresh mint leaves

For the dressing:

  • 50g Smoked Chilli Peanut Butter
  • 1½ tbsp light soy sauce
  • 1½ tbsp runny honey
  • 1 lime

Method

1.) First up, cube the halloumi into large crouton-sized pieces and place in a dry frying pan over a medium heat. Cook on all sides until deliciously golden and crisp. Drizzle with honey, then set aside while you prepare the salad.

2.) Shred the iceberg lettuce, peel and grate the carrot, deseed and finely chop the red chilli, thinly slice the spring onions, roughly chop the peanuts and slice most of the mint, reserving a few leaves to serve. Add everything to a large mixing bowl.

3.) Now for the ultimate dressing. Add the Smoked Chilli Peanut Butter, soy sauce, honey and lime juice to a measuring jug, then whisk until smooth. Pour the dressing over the salad and give everything a good toss until well combined. Top with the honeyed halloumi croutons, garnish with the reserved mint leaves and serve immediately.

If halloumi isn’t your thing, tofu or chicken would both pair beautifully with this salad.
