Smokey Peanut Miso Aubergines

A simple yet utterly delicious veggie supper all on their own, prepare your tastebuds for a mega umami hit. A flippin' delicious addition to soba noodles or steamed bao.

Equipment Needed

Bowl, spoon, baking tray, sharp knife

Ingredients

  • 2 medium aubergines
  • 1/2 cup of miso paste
  • 1/2 cup of Smoked Chilli Peanut Butter
  • 2 tablespoons olive oil
  • 2 tablespoons water
  • a sprinkle of sesame seeds

Method

1. Preheat the oven to 180°C/Gas Mark 4.

2. Cut the aubergines in half lengthways and score flesh in a criss cross pattern.

3. In a medium sized bowl combine all other ingredients and stir to combine.

4. Spread the aubergines liberally with the miso mix ensuring all exposed flesh is coated liberally.

5. Place on a baking tray, drizzle with any remaining miso and sprinkle with sesame seeds.

6. Roast for 25-30 mins until tender and golden brown. Serve with rice, salads, noodles or super soft bao buns.

Recipe Notes

This sauce doubles as a tasty marinade for grilled tofu or BBQ chicken.
