Smoked Chilli Welsh rarebit

As if posh cheese on toast couldn’t get any better… we’ve upped the ante by adding a gloriously generous spoonful of Smoked Chilli peanut butter into the mix and wow, wow, wow. Trust us on this one, it’s an absolute must try.

Equipment Needed

Saucepan, cheese grater, spatula, baking tray

Ingredients

  • 30g unsalted butter
  • 1 tbsp plain flour
  • 120 ml milk
  • 120 g mature Cheddar, grated
  • 2 tbsps Smoked Chilli Peanut Butter
  • 1 tsp Worcestershire sauce
  • 2-4 slices good bread, toasted on one side (we used Jason's Big White Sourdough)

Method

1. Start by heating the grill and lightly toasting one side of your bread.

2. Melt the butter in a saucepan over a medium heat. Stir in the flour and cook for 1 minute (don’t let it brown).

3. Gradually whisk in the milk to make a smooth, thick sauce.

4. Lower the heat and stir in the Cheddar until melted, then whisk in the peanut butter until fully smooth.

5. Add a splash of Worcestershire sauce if you fancy (because we can’t have any kind of cheese on toast without it!!!).

6. Spread the cheesy peanut sauce thickly onto the untoasted side of the bread. Place under a hot grill until bubbling and lightly browned. Let it cool slightly… then enjoy!
