Smoked Chilli Chickpea Chopped Salad

Crunchy, colourful, and loaded with bold flavours, this Smoked Chilli Chickpea Salad is a total winner. Crisp veggies and creamy chickpeas are tossed in a smoky peanut butter dressing infused with chilli, ginger, garlic, and soy sauce. Smoky, nutty, savoury, and with just the right amount of heat, every bite is packed with texture and irresistible taste.

Ingredients

For the salad:

For the dressing:

  • 5 tbsps Smoked Chilli Peanut Butter
  • 1 tsp freshly grated ginger
  • 1 clove garlic, minced
  • Juice of ½ lime
  • 1 tbsp light Soy Sauce
  • Salt to taste

Method

1.) Start by preparing the chopped salad. Roughly chop the red cabbage, then add the red pepper and chop again. Add the spring onions and, you guessed it, chop, chop, chop once more! Scatter over the grated carrot, add the chickpeas, and give everything one final light chop.

2.) Transfer the salad to a serving bowl. Next, make the dressing by adding the Smoked Chilli Peanut Butter, grated ginger, minced garlic, and soy sauce to a jug. Mix well to combine, then gradually add warm water until you have a thick but pourable dressing. Season with salt to taste.

3.) Drizzle the dressing over the salad and toss really well until everything is evenly coated and top with salted peanuts to add an extra crunch. Serve and enjoy!
