Smoked Chilli Cheese Pinwheels

Picnic in a panic? We've got you covered! These pinwheels are quick to whip up and make a delicious snack for picnics, cheese boards, or simply as a go to treat. We can't get enough of our Smoked Chilli Peanut Butter paired with cheese, and this recipe is yet another winning combination.

Equipment Needed

Sharp knife, large baking tray, baking parchment, grater

Ingredients

  • 1 sheet ready rolled puff pastry
  • 6-8 tbsps Smoked Chilli Peanut Butter
  • 75-100 g grated cheese (cheddar works well)
  • 1 egg, beaten (optional for glazing)

Method

1.) Preheat the oven to 200°C (180°C fan) and unroll the puff pastry onto a lightly floured surface.

2.) Spread the peanut butter evenly over the pastry, leaving a small border around the edges. Sprinkle the grated cheese over the top, making sure it's evenly distributed.

3.) Starting from one of the long sides, carefully roll the pastry into a tight log. If the pastry feels a little soft, pop it into the fridge for 15-20 minutes to firm up – this will make it much easier to slice. Once chilled, cut into rounds approximately 1-1.5cm thick.

4.) Arrange the pinwheels flat on a lined baking tray and brush with beaten egg, if using, for a golden finish. Bake for 12-15 minutes, or until the pinwheels are beautifully puffed up and golden brown. 

Recipe Notes

For neat, even slices, try using a pizza wheel to cut the pastry log. We've found it works far better than a knife and makes the job much easier.
