Craving a salad that actually hits? This one's creamy, crunchy, zesty, and totally satay-saying.
Equipment Needed
Jug, bowl, sharp knife, chopping board, garlic crusher
Ingredients
For the dressing:
- 3 tbsp Rugged Peanut Butter
- 1 garlic clove, crushed
- 1/2 fresh red chilli, deseeded and finely chopped
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 3 tbsp good olive oil
For the salad:
- 2 cooked chicken breasts, shredded
- 2 little gem lettuces
- 3 spring onions, finely diced
- 1 avocado, peeled and sliced
- 25g salted peanuts, finely chopped
- Salt and freshly ground black pepper
Method
1. Make the satay dressing by combining all the ingredients together in a jug. Add 5 tbsps water and whisk. Add the shredded chicken to a bowl then pour over the dressing to combine,
2. Assemble the salad by layering the lettuce, avocado, satay chicken, and spring onions.
3. Top with the salted peanuts and enjoy!!!
Recipe Notes
Add an additional tablespoon of water to any leftover dressing and drizzle over the salad for an additional satay hit
