Sausage & Egg Breakfast Bap stuffed with Sage & Onion Peanut Butter

A breakfast bap, but make it fancy. Sage & Onion peanut butter mixed into the sausage patty gives this breakfast a real wake-up call, layered with more peanut butter and a rich fried egg. A breakfast of champions to set you up for the day ahead.

Equipment Needed

Mixing bowl, frying pan, spatula, sharp knife

Ingredients

  • 2 sausages
  • 4 tbsp Sage & Onion Stuffing Peanut Butter
  • Handful of spinach, optional
  • 1 egg, fried
  • 1 brioche bun
  • Oil for frying

Method

1.) Begin by heating a little oil in a pan and lightly toasting each side of a sliced brioche bun.

2.) Next, de-skin the sausages, discarding the skins and placing the meat in a bowl. Mix with 2–3 tbsp of Sage & Onion peanut butter until well combined. Shape the mixture into a patty, place it in the frying pan, and cook for 3–5 minutes per side until browned and cooked through.

3.) Once cooked, remove the patty from the pan. Add a little more oil, then crack in the egg and fry it in the delicious sausage juices.

4.) While the egg is cooking, assemble your bap by spreading the bottom bun with a generous slather of Sage & Onion peanut butter. Top with a handful of spinach, the all-important sausage patty, and the fried egg. Add the top of the bun and enjoy!
