Pumpkin Spice Peanut Butter Bars

No tricks, just treats! These Pumpkin Spice Peanut Butter Bars are the ultimate cosy autumn snack - simple to make, deliciously spiced, and perfect for a Halloween treat!

Equipment Needed

2lb loaf tin, baking parchment, mixing bowl, heatproof bowl, measuring scales, measuring spoons, spatula, chopping board, sharp knife

Ingredients

  • 200g pumpkin purée or cooked pumpkin 
  • 130 g Almost Smooth peanut butter 
  • 80ml maple syrup 
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • Pinch of ground ginger
  • ¼ tsp mixed spice
  • 100g porridge oats
  • 200g dark chocolate chips 
  • Pinch of sea salt 

Method

1.) Line a 2lb loaf tin with baking parchment.

2.) Melt 200g dark chocolate chips in a heatproof bowl - use a bain-marie or short 30 second microwave bursts, stirring until smooth and glossy.

3.) While the chocolate melts, mix together pumpkin purée, maple syrup, peanut butter, vanilla, cinnamon, ground ginger, mixed spice, and a pinch of salt. Stir in 100g oats until thick and sticky.

4.) Press the mixture firmly into your lined tin until even and compact.

5.) Pour the melted chocolate over the top and smooth it out. Pop in the fridge for at least an hour until set.

6.) Lift out, slice into bars, and enjoy!

These bars will keep in the fridge for up to a week
