PBLT Chopped Salad with Hot Jalapeño Ranch Dressing

This BLT inspired Chopped Salad takes everything you love about a classic BLT and gives it a bold, flavour packed twist. Crispy bacon, crunchy lettuce, juicy tomatoes, and fresh veggies are chopped together and drizzled with a creamy Hot Jalapeño Peanut Butter Ranch dressing. Rich, smoky, tangy and with just the right kick of heat, the dressing takes this salad to a whole new level. Packed with crunch, colour, and irresistible flavour in every bite, it's a fresh and satisfying lunch or light dinner that's seriously moreish.

Equipment Needed

Chopping board, sharp knife, measuring jug, spoon, serving bowl, spoons

Ingredients

For the salad:

  • 1 sweet gem lettuce
  • 4 sweetcorn cobettes, cooked
  • Handful cherry tomatoes
  • 1 avocado
  • 8 rashers smoked streaky bacon

For the dressing:

  • 4 tbsps Hot Jalapeño Peanut Butter
  • 2 tbsps full fat Greek yoghurt
  • Juice ½ lemon

Method

1.) Start by boiling the sweetcorn cobettes in a pan for about 8 minutes, or until they’re beautifully yellow and cooked through. Cook the bacon following the packet instructions - we air fried ours at 180°C for 8 minutes, turning halfway through, because we like it extra crispyyyy.

2.) Next up, let’s get chopping! Roughly chop the sweet gem lettuce, slice the cooked sweetcorn off the cob, and give it a light chop. Add the onion and chop again. Toss in the cherry tomatoes and give everything another good chop. Add the avocado and gently chop, chop, chop then finally add the crispy bacon and give it one last chop so everything’s nicely mixed.

3.) For the dressing, mix together the Hot Jalapeño peanut butter, Greek yogurt, and lemon juice in a jug until smooth and well combined. Slowly add warm water until you’ve got a thick but pourable dressing.

4.) Drizzle the dressing all over the salad and toss it all together until everything is beautifully coated. Serve straight away and enjoy!
