PB&J Flapjacks

These aren’t your average flapjacks. Made with our Rugged Peanut Butter for extra crunch and depth and swirled with PB & jam on top, they’re rich, chewy, and seriously moreish. A nostalgic classic, taken up a notch… and ridiculously hard to stop at just one.

Equipment Needed

Saucepan, wooden spoon, square baking tin (20cm x 20cm), baking parchment, measuring scales

Ingredients

  • 80g butter
  • 200g Rugged Peanut Butter
  • 80g soft light brown sugar
  • 50g syrup
  • 250g rolled porridge oats
  • 5 tsp jam

Method

1.) Preheat the oven to 200°C / 180°C fan. In a large saucepan, gently melt the butter, half the peanut butter, sugar and syrup until smooth and glossy. Stir well, then fold in the oats until fully coated.

2.) Line the baking tin with greaseproof paper. Tip in the mixture and press it down firmly into an even layer using the back of a spoon.

3.) Dot over the remaining peanut butter, followed by spoonfuls of jam. Use a cocktail stick to swirl everything together, creating a marbled effect.

4.) Bake for 15–20 minutes, until golden on top but still slightly soft in the middle. Leave to cool completely in the tin before slicing into squares.
