Loaded Sourdough topped with Everything Bagel Peanut Butter Halloumi & Smashed Avocado

Weekends were made for indulgent brunches and this loaded sourdough is *chef's kiss*! Smashed avo, topped with golden, pan-fried halloumi lavishly slathered (and then slathered again) with a rich, nutty Everything Bagel Peanut Butter and honey blend. Sweet, salty, savoury... so good we are making on repeat!

Equipment Needed

Toaster, frying pan, spatula, measuring jug, whisk, sharp knife, chopping board

Ingredients

  • 1 slice sourdough
  • 1 avocado
  • 1 lime
  • 100g halloumi
  • 1 heaped tbsp Everything Bagel Peanut Butter
  • 1 tsp runny honey
  • Salt, to taste
  • Cherry tomatoes & additional sesame seeds (optional)

Method

1.) Smash the avocado and season with a squeeze of fresh lime juice and a pinch of salt to taste. Set aside while you prep the halloumi, slicing it into satisfying thick pieces - about ½ cm each.

2.) Whip up the all-important sauce. Stir together a generous heaped tablespoon of Everything Bagel Peanut Butter with a teaspoon of runny honey. Gradually add cold water (about 50ml), mixing until you have a smooth, spreadable consistency.

3.) Fry the halloumi slices over a medium heat, turning often until they're sizzling and golden on both sides. While they cook, toast your sourdough. As soon as the halloumi reaches that perfect golden hue, brush on a generous layer of your peanut butter sauce.

4.) Time to assemble. Pile the toasted sourdough high with the smashed avo and top with the golden halloumi, brushing over any leftover peanut butter sauce for extra indulgence. Scatter with juicy cherry tomatoes and a sprinkle of sesame seeds for sweetness and crunch, then savour every bite!
