Hot Jalapeño Peanut Butter, Cucumber & Burrata Salad

Say hello to our take on a smashed cucumber salad. Like more mad inventions, it sounds a little wild... but it absolutely works. A hot, spicy peanut butter sauce brings the heat, perfectly balanced by rich burrata and refreshing cucumber. Toasted peanuts add the extra crunch, and if you're after a fiery flavour-packed lunch idea - this one's well worth a whirl!

Equipment Needed

Chopping board, sharp knife, measuring jug, whisk, measuring spoons, large plate

Ingredients

For the salad:

  • 1 large cucumber
  • 1 whole burrata
  • 2 spring onions
  • Pinch of chilli flakes
  • Handful of roasted peanuts, chopped
  • Extra jalapeños (optional)

For the sauce:

  • 2 tbsp soy sauce
  • ½ tsp fish sauce
  • 1 tbsp maple syrup
  • 1 heaped tbsp Hot Jalapeño Peanut Butter

Method

1.) Make the sauce by whisking together the soy sauce, fish sauce, maple syrup, and peanut butter in a jug. Add cold water gradually (we used about 70ml) until you get a pourable but still thick consistency.

2.) Prep the salad by thinly slicing the cucumber and arrange on a large plate. Place the whole burrata in the centre, then top with sliced spring onions, chilli flakes, chopped peanuts, and jalapeños (if using).

3.) Drizzle and serve! Pour the sauce over the salad and dive in.

If a lunch was the definition of a hot mess - this would be it. But trust us... it's a glorious one!
