Hot Jalapeño Peanut Butter Chilli Cheese Toast

After a lunch that packs a punch? This chilli cheese toast is a fiery feast that’s ready in minutes! Sourdough slathered with our Hot Jalapeño PB, topped with lashings of melted cheddar, and finished with red onion and peppers for that irresistible crunch. Pure yum - you’ll wish you made more than one slice!

Equipment Needed

Chopping board, sharp knife, cheese grater, baking tray

Ingredients

  • 1 slice bread (we used white sourdough)
  • 2 tbsps Hot Jalapeño Peanut Butter
  • ¼ red onion
  • ¼ red pepper
  • 25g extra mature cheddar
  • Coriander (optional)

Method

1.) Preheat your grill on a medium-high setting and prep your toppings. Dice ¼ red onion, ¼ red pepper, and grate your cheese then set aside.

2.) Lightly toast your bread of choice, before slathering it liberally with Hot Jalapeño Peanut Butter. Place on a baking tray, then top with the cheese, onion, and pepper.

3.) Pop it under the grill until the cheese melts and starts to bubble - but keep a close eye, the grill works fast and you don’t want to burn your lunch!

4.) Top with coriander if desired and, as tempting as it looks, give it a couple of minutes to cool before digging in - that melted cheese will be hot!
