Easy Healthy Hot Jalapeño Lunch Spicy

Equipment Needed

Large bowl, whisk, garlic crusher, sharp knife, measuring jug

Ingredients

For the bowl:

2 chicken breasts, cooked and diced into chunks
250g Sticky rice
¼ red cabbage, shredded
½ cucumber, cut into slices
2 carrots, cut into matchsticks
1 avocado, sliced
sesame seeds

For the sauce:

3 tbsp Hot Jalapeño Peanut Butter
1 tbsp Soy Sauce
1 tbsp runny honey
½ tbsp sesame oil
1 clove of garlic, crushed
50ml water

Method

1. Add the peanut butter to a bowl along with the soy sauce, runny honey and seasame oil, mixing after each addition. Add a crushed garlic clove and mix again. Add water, stirring constantly, until you have a thick sauce.

2. Add the chicken chunks and stir well until evenly coated, and leave to one side.

3. Meanwhile, assemble the poke bowl. Add cooked sticky rice to a bowl and add shredded red cabbage, cucumber, carrots and avocado. Finally add the all important peanut butter chicken, and top with sesame seeds.
