Does your lunch need spicing up? Try these super simple chicken poke bowls using our Hot Jalapeño Peanut Butter to add a little fire to your lunchtime feast!
Equipment Needed
Large Bowl, Whisk, Garlic Crusher, Sharp Knife, Measuring Jug
Ingredients
For the bowl:
- 2 chicken breasts, cooked and diced into chunks
- 250g Sticky rice
- ¼ red cabbage, shredded
- ½ cucumber, cut into slices
- 2 carrots, cut into matchsticks
- 1 avocado, sliced
- sesame seeds
For the sauce:
- 3 tbsp Hot Jalapeño Peanut Butter
- 1 tbsp Soy Sauce
- 1 tbsp runny honey
- ½ tbsp sesame oil
- 1 clove of garlic, crushed
- 100ml water
Method
1. Add the peanut butter to a bowl along with the soy sauce, runny honey and seasame oil, mixing after each addition. Add a crushed garlic clove and mix again. Add water, stirring constantly, until you have a thick sauce.
2. Add the chicken chunks and stir well until evenly coated, and leave to one side.
3. Meanwhile, assemble the poke bowl. Add cooked sticky rice to a bowl and add shredded red cabbage, cucumber, carrots and avocado. Finally add the all important peanut butter chicken, and top with sesame seeds.
Recipe Notes
For an extra hit of peanut butterness, loosen any remaining sauce with a splash of water and drizzle generously over the whole bowl
