Everything Bagel Peanut Butter Noodles

This stir fry is super quick to whip up but bursting with flavour, thanks to a sauce loaded with Everything Bagel PB goodness.

Equipment Needed

Chopping board, sharp knife, wok, spatula, measuring jug, whisk, measuring spoons

Ingredients

For the sauce:

  • 4 tbsps Everything Bagel Peanut Butter
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar (or apple cider vinegar)
  • 1 tbsp runny honey 
  • 1 tbsp sesame oil 
  • Approx 100ml cold water 

For the stir fry:

  • 2 chicken breast
  • 1 packet fresh egg noodles
  • Veg of choice - we used pak choi, carrots, red peppers, sugar snap peas & baby corn

Method

1.) Heat 1 tablespoon of oil in a wok over medium-high heat. Dice the chicken and add it to the pan. Cook for 6–7 minutes, stirring regularly, until golden brown and cooked through.

2.) While the chicken cooks, make the sauce. Combine all ingredients in a jug, then whisk in cold water until you get a thick-but-pourable consistency. We used around 100ml for a sauce that’s thick but still saucy - add more water if you like it looser.

3.) When the chicken is nearly cooked, add your veggies and continue stirring. Meanwhile, cook fresh egg noodles according to the packet instructions.

4.) Once the veggies are almost tender, add the noodles to the wok and pour in the peanut butter sauce. Stir everything together until evenly coated and heated through.

5.) Serve immediately, topped with sesame seeds and chopped peanuts if you like an extra crunch.

Recipe Notes

Swap the chicken for prawns, or keep it veggie with tofu
