Everything Bagel Chickpea Fritters

Whip up a batch of these versatile chickpea fritters for an easy, street food-inspired brunch. A creamy peanut butter batter brings together chickpeas, carrot and spring onion to create the ultimate savoury brunch dish. Serve with smashed avocado, a drizzle of sweet chilli sauce and a sprinkle of crushed peanuts for the perfect swavoury finish. Pure yum!

Blender, chopping board, sharp knife, frying pan, baking tray, spatula

Ingredients

For the fritters:

  • 1 x 570g jar chickpeas (we used Bold Bean Co Queen Chickpeas)
  • 5 tbsps Everything Bagel Peanut Butter
  • 3 eggs
  • 100g self-raising flour
  • 50ml milk
  • 1 tsp bicarbonate of soda
  • 1 clove garlic
  • 1 tbsp soy sauce
  • 1 tbsp sweet chilli sauce, plus extra to serve
  • 1 large carrot, grated
  • 4 spring onions, finely sliced
  • vegetable oil for frying

To serve:

  • 1 avocado
  • Juice of 1 lime, ½ juiced, ½ cut into wedges
  • 2 tbsps sweet chilli sauce
  • 2 spring onions, finely sliced
  • 2 tbsp salted peanuts, roughly chopped

Method

1.) Drain the jar of chickpeas and add half to a blender and half to a mixing bowl.

2.) Add 5 tbsp Everything Bagel Peanut Butter to the blender, along with the eggs, garlic clove, flour, milk, bicarbonate of soda, soy sauce and sweet chilli sauce. Blitz until smooth and creamy. Pour the batter into the mixing bowl with the remaining chickpeas, then stir through the finely sliced spring onions and grated carrot.

3.) Heat a splash of oil in a frying pan over a medium heat. Spoon generous tablespoons of batter into the pan and cook in batches for 2-3 minutes on each side, until golden, crisp and smelling seriously good. Transfer the cooked fritters to a low oven to keep warm while you fry the rest, adding a little extra oil to the pan as needed.

4.) While the fritters are sizzling away, make the smashed avo. Mash the avocado with the juice of half a lime, a good pinch of salt and a sprinkle of chilli flakes until creamy and delicious.

5.) Time to plate up! Stack the fritters high, then top with the smashed avo, spring onions and a scattering of salted peanuts for crunch. Serve with juicy tomatoes and an extra drizzle of sweet chilli sauce.
