Everything Bagel Biccies

These buttery, melt-in-the-mouth biccies have all the delicate crumb of a traditional shortbread, with a savoury, nutty flavour that makes them utterly irresistible. The Everything Bagel Peanut Butter brings notes of toasted sesame, garlic and onion, creating a biscuit that's equally at home alongside a cheeseboard as it is enjoyed straight from the tin. Crisp, crumbly and packed with flavour, they're guaranteed to be a crowd pleaser.

Equipment Needed

Mixer, mixing bowl, rolling pin, cookie cutter, baking tray, baking parchment

Ingredients

  • 80g Everything Bagel Peanut Butter
  • 60g butter (softened)
  • 1 egg yolk
  • 120g plain flour
  • ½ tsp salt
  • 1-2 tbsp cold water (if needed)

Method

1.) Start by beating the softened butter and Everything Bagel Peanut Butter together until smooth and creamy. Add the egg yolk and salt, then mix in the flour to form a dough. If the mixture feels a little dry, add a splash of cold water to help bring it together. Wrap the dough and chill for 20-30 minutes. This helps firm it up and ensures the biscuits hold their shape while baking.

2.) Once chilled, roll out the dough to roughly the thickness of a pound coin. Use a small cutter to stamp out your biscuit shapes and place them on a lined baking tray. Chill again for 30 minutes to help the biscuits stay nice and neat in the oven.

3.) Bake at 180°C (160°C fan) for 12-15 minutes, or until lightly golden around the edges. Leave to cool completely on the tray, as this will help them crisp up beautifully.
