Chocolate Sourdough French Toast

French toast has to be up there with the ultimate brunch indulgences, but naturally, we couldn’t leave well enough alone. We’ve taken thick slices of Bread Queen’s award-winning Plain Sourdough, stuffed them with a gloriously generous layer of our Chocolate Peanut Butter, dunked the whole lot in cinnamon-spiked custard and fried it in butter until golden, crisp and caramelised on the outside, with a warm, gooey, chocolatey middle. A proper match made in peanut butter heaven, served ours with a tumble of fresh berries because, you know… balance.

Ingredients

  • 4 thick slices Bread Queen Plain Sourdough
  • 2 eggs
  • 100ml whole milk
  • 1 tsp vanilla extract or vanilla bean paste
  • 1 tbsp caster sugar
  • ½ tsp cinnamon
  • Pinch of salt
  • 1 tbsp butter, for frying
  • 3 - 4 tbsps Chocolate Peanut Butter

Optional extras to serve:

  • Fresh berries or banana
  • Extra warmed Chocolate or Almost Smooth peanut butter for drizzling
  • Roasted peanuts
  • Pinch flaky sea salt

Method

1.) Preheat the oven to 200°C fan and bake the sourdough for 22-23 minutes. Once baked, set aside to cool for 1-2 hours.

2.) While the bread is cooling, make the egg mixture. In a shallow bowl, whisk together the eggs, milk, vanilla, sugar, cinnamon and salt until well combined.

3.) Cut four thick slices of sourdough. Spread 1½-2 tbsp Chocolate Peanut Butter generously over two of the slices, then sandwich with the remaining slices.

4.) Dip each sandwich into the egg mixture for around 30-45 seconds on each side. Sourdough is pretty absorbent, so give it enough time to soak up all that goodness without letting it get so saturated that it starts to fall apart.

5.) Melt the butter in a frying pan over medium-low heat. Add the sandwiches and cook for 3-4 minutes on each side, until beautifully golden and crisp. Don’t rush this bit - cooking them low and slow gives the outside time to caramelise while the Chocolate Peanut Butter inside gets deliciously warm and gooey.

6.) Serve with your fruit of choice and an extra drizzle of Almost Smooth Peanut Butter for the ultimate nutty finishing touch.

Recipe Notes

Feeling fruity? Add a layer of sliced banana on top of the chocolate peanut butter before sandwiching together.
