Chocolate Peanut Butter Oat Bars

Chocolatey, chewy, salty, and sweet - these nutty oat bars are the ultimate super quick to whip up treat.

Equipment Needed

2 x mixing bowls, scales, spatula, saucepan, 1lb loaf tin, cocktail stick

Ingredients

For the base:

  • 80g oats
  • 80g ground almonds
  • Pinch salt
  • 1 tbsp milk
  • 4 tbsp maple syrup
  • 1 tsp vanilla extract
  • 5 tbsp Chocolate Peanut Butter

For the topping:

  • 100g dark chocolate
  • 1 tsp coconut oil
  • 1 tbsp Almost Smooth Peanut Butter

Method

1.) Line a 1lb loaf tin with baking parchment and set aside.

2.) Add all the base ingredients to a bowl and mix well until thoroughly combined. Press firmly into the prepared tin.

3.) Melt the chocolate and coconut oil together - either in a heatproof bowl over a pan of simmering water or in the microwave in 30 second bursts, stirring each time.

4.) Once melted, pour the chocolate over the base and spread it out to create an even layer.

5. Spoon small dollops of Almost Smooth peanut butter across the top, then use a cocktail stick to swirl it into a marbled pattern.

6. Chill in the fridge for at least an hour until set, then slice and enjoy!

Recipe Notes

Adding a teaspoon of coconut oil to the melted chocolate gives it a lovely shine and helps stop it from cracking when you slice
