Avocado Toast with Quick Pickles & Peanut Butter

Does your brunch need a little spice, a little zing? This crunchy number will tick all your boxes. Rich nuttiness, crusty sourdough, creamy avocado and the quickest of all pickles.

Ingredients

  • 2 thick slices of sourdough bread
  • Smoked Chilli Peanut Butter
  • 1 red onion
  • 200ml (approx) white wine vinegar
  • 1 ripe avocado, sliced
  • Salt & black pepper to season

Method

1. Finely slice the red onion and place in a jar with just enough vinegar to cover. Set aside for at least 5 minutes to quick pickle.

2. Peel and slice the avocado.

3. Toast thick slices of sourdough

4. Spread toast with a thick layer of smoked chilli peanut butter.

5. Top with avocado and the pickled red onion and generous grind of black pepper.

Recipe Notes

Not into onions? try radish or carrot ribbons. swap pickles out for a spicy kimchi or a simple sprinkle of turkish chilli flakes and squeeze of lime.
